Domaine d’Aussières

AUSSIÈRES CHARDONNAY 2015

Background

Domaine d’Aussières has been since the Roman era, one of the great estates of the Languedoc. In the Middle Ages, it belonged to the celebrated Abbey of Fontfroide, its neighbor. With its exceptional location, terroir and by the force of its history, the Domaine d’Aussières is, a wild and natural property of intense and powerful beauty. Since 1999, Domaines Barons de Rothschild (Lafite) have revitalized over 413 acres of vineyards on the 1,359 acre estate, as well as renovated the cellars of the Domaine. The 259 acres of AOC Corbières vineyard are planted to carefully-selected traditional Languedoc varietals: Syrah, Mourvedre, Grenache and Carignan. The vineyard is located near Narbonne, in the Corbières’ microclimate of Fontfroide and Boutenac. Aussières Chardonnay is a blend of the Domaine’s wines and wines selected from the best terroirs for Chardonnay in the Languedoc.

Vintage Notes

The weather provided ideal conditions for the vines throughout the growing season, from bud break, through flowering and ripening. Thanks to these consistently good conditions, all plots were able to reach optimal ripeness, offering excellent aromatic expression and perfect balance for all varieties.

Winemaking

The Chardonnay was harvested September 1st - 3rd. Vinification took place in temperature-controlled stainless steel vats and alcohol fermentation took place for 15 days at 64°F.

The wine was aged for 4 months in stainless steel vats.

Tasting Notes

Clear yellow color with glints of green. On the nose, notes of citrus fruit zest mingled with white flowers. On the palate, generous, with plenty of volume, a fresh, lively attack, typical of the Chardonnay grown on the Languedoc’s “cool” terriors.
