Domaine d’Aussières

AUSSIÈRES CHARDONNAY 2016

Background

Domaine d’Aussières has been since the Roman era, one of the great estates of the Languedoc. In the Middle Ages, it belonged to the celebrated Abbey of Fontfroide, its neighbor. With its exceptional location, terroir and by the force of its history, the Domaine d’Aussières is, a wild and natural property of intense and powerful beauty. Since 1999, Domaines Barons de Rothschild (Lafite) have revitalized over 413 acres of vineyards on the 1,359 acre estate, as well as renovated the cellars of the Domaine. The 259 acres of AOC Corbières vineyard are planted to carefully-selected traditional Languedoc varietals: Syrah, Mourvedre, Grenache and Carignan. The vineyard is located near Narbonne, in the Corbières’ microclimate of Fontfroide and Boutenac. Aussières Chardonnay is a blend of the Domaine’s wines and wines selected from the best terroirs for Chardonnay in the Languedoc.

Vintage Notes

The weather varied enormously over the Languedoc region. The nearby Mediterranean coastline was strongly impacted by low rainfall, not only during the winter but also during the growing season. This very special vintage enabled a good expression of the vines throughout the growth cycle, from bud break to flowering and the ripening stage. The combination of our cool terroir and plots that are now reaching maturity, we were able to able to meet the challenge provided by this vintage’s atypical weather conditions. The constraints imposed by the climate enabled excellent levels of ripeness to be achieved for all our vines, with beautiful aromatic expressions and good balance for all plots, from the first to ripen through to the last.

Winemaking

The Chardonnay was harvested September 1st - 3rd. Vinification took place in temperature-controlled stainless steel vats and alcohol fermentation took place for 15 days at 64°F.

The wine was aged for 4 months in stainless steel vats.

Tasting Notes

Beautiful bright yellow with pale green highlights. Light notes of pink grapefruit and almond blossom. Ageing on the lees gives the wine richness and body, that are accompanied by freshness and finesse through to the particularly long finish.
