Domaine d’Aussières has been since the Roman era, one of the great estates of the Languedoc. In the Middle Ages, it belonged to the celebrated Abbey of Fontfroide, its neighbor. With its exceptional location, terroir and by the force of its history, the Domaine d’Aussières is, a wild and natural property of intense and powerful beauty. Since 1999, Domaines Barons de Rothschild (Lafite) have revitalized over 390 acres of vineyards on the 1,359 acre estate, as well as renovated the cellars of the Domaine. The 259 acres of AOC Corbières vineyard are planted to carefully-selected traditional Languedoc varietals: Syrah, Mourvedre, Grenache and Carignan. The vineyard is located near Narbonne, in the Corbières’ microclimate of Fontfroide and Boutenac.

The winter of 2012 will be remembered for the long period of cold weather that dominated February, with 12 consecutive days of sub-zero temperatures, low temperatures are very rarely seen in this region. The particularly dry winter led to fears of a drought, but March, April and June brought plenty of rain. The summer period benefited from normal temperatures and rainfall. The problems for this vintage occurred later in the season, with a rather cold September that ended with a stormy period. However, while this weather meant that the harvest was complicated, it did not affect the quality of the grapes.
The grapes were harvested between September 20th and October 12th. Vinification took place in the traditional Bordeaux method or carbonic maceration depending on the grape varietal. Fermentation took place in concrete and stainless steel vats. Maceration lasted 12-14 days.
Ageing was 20% in barrels and 80% in vats for 18 months.
Beautiful deep, dark crimson color with hints of ruby. The nose is reminiscent of the surrounding garrigue, with some floral notes of white rock rose mingled with black fruit. The warm palate presents solid volume and is well-balanced with fine, delicate tannins. The finish is long, fresh and spicy.
