Cold pre-fermentation occurs in stainless steel tanks, long maceration between 40 and 45 days at 82°F in new oak barrels on fine lees. Followed by malolactic fermentation and lees stirring in barrels.

First, the wine undergoes micro-bullage or microoxygenation and then is aged on lees with regular bâtonnage during 3 months. 18 months aged in tanks and oak barrels (95% French oak and 15% American oak).

Tasting Notes

A very ripe, suave style, showing modern mocha, licorice and black tea aromas that lead the way for a solid core of blackberry and plum, with a velvety finish.
Finishes with ample intergrated toast. Pairs well with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roasted chicken, roasted, braised and grilled dishes.
